Update with systemd.
To see what timezones are available use:
timedatectl list-timezones
Grep through, maybe head it to see the format, if your into that sort of thing.
Then update with the one you have chosen via:
sudo timedatectl set-timezone America/Chicago
Systemd love it or hate it.
